Superfood Snickerdoodle Smoothie

I was running so much everyday and needed something to fuel me and replace the nutrients that I was sweating out. This was the perfect blend! Incredibly tasty and loaded with dense nutrition that the body needs when training hard. It’s also served me well as a breastfeeding mama! I sometimes don’t have time to make a full meal and this smoothie takes care of me in a big way. Serves 4 What You’ll Need
3 cup young coconut water 1/2 cup young coconut meat, packed tightly 3 tablespoon organic grade B maple syrup or coconut sugar 3 tablespoon raw organic almond butter 1/2 cup raw organic soaked walnuts* 1/2 teaspoon lucuma powder 1 1/2 teaspoon cinnamon 1/2 teaspoon mesquite powder 1/2 teaspoon vanilla extract 1/4 teaspoon sea salt 1 tablespoon goji berries for topping Method Blend coconut water, coconut meat, maple syrup, almond butter, walnuts, lucuma, cinnamon, mesquite, vanilla, lemon juice and salt in the high-speed blender and serve. *Soak walnuts for 20 min to 2 hours prior to making to release phytic acid.
